During the first lockdown in March, I really got into home cooking. I was always a reluctant cook, but now I can’t stop trying new dishes and adding my own take on them.
One of my favourite recipes is an amazing slow-cooked beef rendang. Flavoursome, delicious and comforting; what’s not to love?
To make this meal, you will need:
- 400 grams diced beef
- Red pepper
- Fresh root ginger
- One medium size red onion
- Six garlic cloves
- 400 ml coconut milk
- One beef stock cube
- 200 ml water
- 1tsp ground cinnamon
- 3tbsp dark soy sauce
- Coriander
- Two lemongrass stalks
- Rice
I always try to use organic products wherever possible – apart from being better for you, the taste is incredible.
